Region: Domaine Cigalus enjoys a hot, sunny Mediterranean climate (described as “semi‐arid with temperate spring variants”) ensuring early ripening of all the grape varieties. This arid climate (low rainfall) is offset by the very deep soils (sediments deposited by the Aussou, a stream at the edge of the estate) which store the winter rains for longer but which are less fertile due to the presence of a slightly chalky sandstone in the subsoil, dating back to the Campanian (secondary era, prior to the emergence of the Pyrenees).
 
Grape varieties: Chardonnay, Viognier, Sauvignon.
 
Characteristic: A brilliant, clear golden yellow colour. Intense, complex bouquet of ripe citrus fruit (grapefruit), peach, honey and dried fruit, along with a toasted note. Full and silky on the palate, mature and ample with notes of vanilla, toast, butter and tropical fruit. Great length.
 
Food Pairing: Serve with fried scallops or fish cooked in sauce, or as an aperitif.
 
Serving temperature: 10-12°С.

Region: The Viala is the iconic wines of Château Laville-Bertrou. The grapes comes from a small parcel of land on the terraces, situated amongst the exceptional terroirs of the La Livinière appellation (officially recognized as a “growth” of Languedoc by INAO since 1998).
 
Grape varieties: Syrah, Grenache and Carignan.
 
Characteristic: Powerful nose of blackberries and violets and a beautiful attack on the mouth, smooth tannins and subtle woody notes, beautifully balanced, and an infinitive lasting taste in the mouth. An extreme delicacy and a huge lastingpotential.
 
Food Pairing: Best to accompany grilled red meats, game or fine cheeses.
