Characteristics: Can Sumoi Ancestral Montonega is produced in the ancestral style, also known as petillant naturel or pet-nat. This method of making wine is one of the oldest methods of producing sparkling wines. Unlike other sparkling wines, which are made using the méthode champenoise, where the wine undergoes a double fermentation, Can Sumoi Ancestral Montonega only undergoes a single fermentation. As a result, the wine retains its natural sweetness and a slight natural carbon dioxide, which gives it a special character.
A fresh and fruity wine, with notes of green apples, citrus and minerals. Pale golden color. Aromas of fresh lemon and white flowers form an elegant bouquet. The taste is balanced, elegant, subtle, clean, with tones of ripe apples, jasmine and freesia, nutty notes and nuances of toasted rye, creamy texture and a persistent, piquant aftertaste.
This wine is organic and is produced according to the principles of biodynamic farming.
Gastronomic compatibility: Recommended to be served with seafood, light fish appetizers, sushi and sashimi.
