Domaine de Perdrycourt is a family-owned winery located in the Chablis region of Burgundy, France. Established in 1986 by Arlette and Roger Courty, the estate began with just 0.5 hectares of vineyards in Montigny-la-Resle and produced its first harvest in 1989. In 2007, their son Rémi, after studying enology in Beaune, crafted his first wine at the estate, which received the "Coup de Coeur" distinction from the Hachette Wine Guide. Today, Rémi officially manages the domain, which now encompasses 14 hectares of vineyards primarily situated on the Ben plateau near Chablis.
The vineyards are planted exclusively with Chardonnay grapes, the emblematic variety of Chablis. They are located on Kimmeridgian soils rich in limestone and fossilized marine organisms, contributing to the wines' characteristic minerality. The estate practices environmentally sustainable viticulture, minimizing the use of chemical fertilizers and pesticides. Grapes are harvested mechanically to ensure optimal selection.
Fermentation occurs in stainless steel tanks at controlled temperatures over 1–2 weeks. Malolactic fermentation typically takes place in December, followed by aging on fine lees with regular bâtonnage. Bottling usually occurs in February or March of the following year.
