Region: The Chablis region is a limestone plateau dissected by valleys. The Premier Cru sits on a geological layer dating back to the Kimmeridgian period (155 million years BC), where marl and limestone alternate with tiny deposits of marine rocks. This is reminiscent of the warm and shallow sea that covered Burgundy.
Grape varieties: Chardonnay.
Characteristics: Light straw colour. Complex aroma with notes of white fruits and pleasant minerality. Taste. Well balanced, with a lemony and fresh aftertaste.
Gastronomic compatibility: Ideal with oysters or fish in sauce, as well as with white meat in sauce (veal, poultry). Due to its minerality, it is perfect for sushi. It goes well with goat cheese, blue cheese and Comte cheese.
